Rose Park Preschool Recipes


Pumpkin Soup

2 tablespoons oil
1 finely chopped onion
1 large pumpkin
Chicken or vegetable stock
fresh Sage

cook finely chopped onion in oil
add Pumpkin
add water and stock to cover
add Sage and other seasoning if required

Pumpkin Muffins

2-3 cups of self raising flour
1 egg
2 cups of mashed cooked pumpkin
1/2 cup of milk

in a large bowl add self raising flour to mashed pumpkin and stir
add egg and milk and combine
cook at 150C for 15 to 20 minutes in muffin pans

variation as scones

2 1/2 cups of wholemeal self raising flour
1 cup cooked mashed pumpkin
55 grams butter
1/2 cup milk

rub butter into flour
add Pumpkin and milk
roll out dough and cut into rounds
place on greased tray and cook in oven at 180C for 15 minutes

Egg Plant Meatballs

1 large egg plant
500 grams chicken
1 large egg
bunch of fresh mint
1 cup of bread crumbs
salt to taste
olive oil to cook

blanche egg plant in boiling water until soft
scoop flesh from egg plant when cool and place into large bowl
mix mince and bread crumbs with egg plant flesh
bind with egg and add salt and chopped mint
roll into small balls
cook over medium heat in small amount of olive oil

cut muffins into halves
spread with tomato paste/sauce
add fresh herbs; basil, thyme, marjoram/oregano
add fresh tomatoes
use toppings as desired
bake in oven or grill

Zucchini Slice

1/4 cup of olive oil
500 grams of zucchini
1 large onion
170 grams parmesan
1 cup of self raising flour
2 large eggs lightly beaten
3 large ripe tomatoes thickly sliced

preheat oven to 200C
brush a 25 cm square or 30x20 cms cake pan with oil and line with paper
combine all ingredients except tomatoes and remaining oil
cover with tomato slices and drizzle with oil
bake for 30 minutes or until firm
